Chifferi rigati are a pasta typical of Southern Italy, made with durum wheat semolina, water and salt. Their main feature is the striped shape, which gives them a rustic and particular appearance.
The diameter of the pasta generally varies between 6 mm and 12 mm, while the length can reach up to 40 cm. Thanks to their generous size, chifferi have an excellent ability to absorb condiments. They are ideal for enhancing tasty meat or vegetable sauces and fish-based condiments. Another peculiarity of pasta is that it stays cooked better than other shapes: it remains al dente even after prolonged cooking in the pan and does not fall apart easily during preparation.
